Radicchio and Parsley Salad with Anchovy Dressing
serves 4
Ingredients
- 1 hd radicchio, quartered, cored, sliced lengthwise
- 1/ 4 parsley
- 1 T lemon juice
- 1 T capers
- 1 t anchovy fillets, chopped
- 1 cl garlic, chopped
- 2 T olive oil
Instructions
- Whisk together the lemon juice and olive oil, mix in the garlic, capers and anchovies, then season to taste.
- Toss the radicchio and parsley in the dressing.
- Plate and serve chilled.
